UTSA Libraries Coronavirus Cuisine

Here’s a fun activity to add to your pandemic to-do list—get inspired by Mexican pastries.

Using limited resources and creating from a burgeoning telecommuting environment, the UTSA Libraries created a series of digital mini-cookbooks featuring favorite recipes from the Mexican Cookbook Collection, making it even easier to explore the largest collection in the nation from the safety of home during a worldwide pandemic.
 
The first volume of the “Recetas” series featured recipes for Mexican desserts, including baked bananas, rice pudding and churros. The second volume featured Mexican beverages, including atole, horchata and a mezcal margarita. The third volume spotlights main dishes—or platos fuertes—and takes center stage in the latest volume of “Recetas: Cooking in the Time of Coronavirus,” an e-book series released by the UTSA Libraries.

The digital publications includes recipes in Spanish and translated into English. The mini-cookbooks are free and available to the public. To view or download all three volumes of “Recetas: Cooking in the Time of Coronavirus,” visit lib.utsa.edu/recetas​​​​​​​
